Getting kids to eat healthy can be quite an undertaking. So as a mom I try to get creative in what I serve up for meals. The easiest thing to do it find healthy versions of things my son already likes, then I put a low-carb spin on them and VOILA. The secret to the sweetness is confectioners erythritol so it keeps this recipe low-carb.

One thing that I know he loves is pudding cups. You can just imagine his face when I served up chocolate pudding for breakfast! He loved getting "dessert for breakfast" and I loved knowing that I was actually giving him a protein packed, fat fueled keto, low-carb delicious meal. Mom for the win!

Keto Chocolate Breakfast Pudding

Ingredients:

 10 hard boiled eggs, peeled
 1 can (13 ½ oz) full fat coconut milk
 ½ cup confectioners erythritol
 ¼ cup unsweetened cocoa powder
 2 tsp pure vanilla extract
 1 tsp ground cinnamon

Directions:

Place all ingredients in a blender and puree until smooth.

Recipe Notes:

You can store this recipe in an air tight container in your refrigerator for up to 4 days.

If you prefer additional sweetness you can add 1 to 2 teaspoons of stevia glycerite ad more coco powder to suite your taste. If you prefer less sweetness you can reduce the amount of confectioners erythritol.
