My husband is notorious for suggesting we eat at a certain fast food restaurant that shall remain nameless. I myself have never been big on fast food but especially now that I watch what I am putting into my body. We do travel a LOT so I get his thinking of wanting to spend less money on dining out while on the road. So, I did always order the exact same sandwich every time we would go there, and started peeling off the bun.

That was when I discovered a recipes for this deliciousness. I made some adjustments to the recipe, used powdered powered erythritol for the sweetener and VOILA! We can now enjoy that tasty sandwich without the guilt that came with it. My husband was very surprised when he ate it and continues to tel everyone how it tastes exactly the same just without the bun.  Anytime in my house my husband loves a recipe you know for sure it is a hit!

This keto friendly, low-carb salad tastes exactly like a Big Mac in a bowl!

Yields6 Servings

Ingredients:

Salad
 1 lb ground beef
 1 tsp fine sea salt
 ¼ tsp black pepper
 8 oz shredded lettuce
 1 cup tomatoes, diced
 1 cup shredded cheddar
 ½ cup dill pickles, diced
Dressing
 ½ cup avocado oil mayo
 2 tbsp dill pickles, diced
 2 tsp yellow mustard
 1 tsp white vinegar
 ½ tsp paprika
 5 ½ tbsp powered erythritol

Directions:

Cook ground beef in skillet, breaking up the meat as it browns and seasoning with salt and pepper.

Add all dressing ingredients in bowl and use immersion blender to combine well.

Combine the remaining salad ingredients in large bowl. Add the ground beef. Toss with dressing and serve.
